Bacon and Prawn Skewers

  1. Combine 8 large prawns, a clove of crushed garlic and 2 teaspoons of oil in a medium bowl. Thread prawns lengthways onto 8 wooden skewers.

  2. Cut 10 bacon rashers in half lengthways. Wrap 1 piece of bacon around each prawn, leaving tails exposed. 

  3. Preheat a chargrill or barbecue grill over medium-high heat. Cook skewers, turning, for 5 minutes or until prawns change colour and are just cooked through. 

  4. Meanwhile, combine 2 tablespoonfuls of juice, a tablespoon of dill, a tablespoon of chives and 2 teaspoons of oil in a small bowl. Serve prawns drizzled with herb dressing.
